Ingredients:
- 60 grams - Warm water
- 10 grams - Yeast
- 60 grams - Refined sugar (for flour)
- 20 grams - Refined sugar (for yeast)
- 300 grams - Bread flour
- 40 grams - Bread flour (for dusting)
- 60 grams - Evaporated milk
- 5 grams - Salt (dissolve in evap. milk)
- 20 grams - Butter + 5 grams (if high ratio is not available)
- 25 grams - Lard
- 5 grams - Vanilla
- 5 grams - High ratio shortening
- 1 pc. - Small egg, slightly beaten
Mise-en-place:
- Weigh ingredients
- Greased baking sheet and mixing bowl with oil
- Sift flour
- Prepare warm water
To those who are confused what mise-en-place is:
It is a French culinary phrase which means "putting in place" or "gather". It refers to the setup required before cooking, and is often used in professional kitchens to refer to organizing and arranging the ingredients.
Procedure:
1. In a small bowl, combine warm water with 10g yeast and 20g sugar. Let it rise.
2. Combine also evap. milk, vanilla, and salt. Set aside.
3. Combine 300g flour and 60g sugar, make a well at the center add the dissolved milk, vanilla and salt. Add egg and yeast mixture then mix it very well to form a dough.
4. Knead the dough by adding shortening little by little, butter, then lard and high ratio shortening (if available).
5. Transfer to a clean surface dusted with 40g flour and knead until the texture of the dough becomes smooth and elastic, brush surface with oil to prevent from sticking.
6. Put in a greased mixing bowl and cover with damp cloth or cling wrap, let it rise for 45 minutes.
7. Transfer to a clean surface then punch the dough to release the air. Weigh the dough (45g) each and form into buns or dinner oil.
8. Proof for 20 minutes or until double in size.
9. Brush with evaporated milk, bake for 15 minutes or until brown.
